Serves: makes 50
4 egg whites
2½ cups powdered sugar
¼ teaspoon vanilla
2 drops red food coloring
Earth Balance butter (for greasing)
Flour, can be gluten-free if need be (for greasing)
Preheat oven to 225 degrees F.
Spread the butter over two baking sheets.
Sprinkle the flour on top until evenly coated. Set aside.
In a large mixing bowl, whisk the egg whites until fluffy, about five minutes.
Slowly add in the powdered sugar while stirring.
Mix in the vanilla and food coloring.
Using a piping bag with a flower shaped tip, pipe the meringues onto the baking sheets in small circular pieces about the size of a quarter.
Place meringues in oven and bake *with a wooden spoon in the door to keep it open* for 1 hour and 45 minutes to 2 hours, until they are light and airy.
