Sautéed Cabbage with Potatoes (Touffer Le choux A La Mauricienne)
Half White Cabbage (Big one)
4 medium size potatoes
1 teaspoon crushed garlic paste
1 teaspoon crushed ginger paste
1 tablespoon dried thyme or fresh thyme
1 medium size tomato
1 big onion
Salt to taste
5 tablespoons of vegetable oil
1/3 cup water
2 tablespoons of chopped coriander
Over medium heat, heat your oil in a deep saucepan..
Meanwhile, thinly chop your onion..
Stir in your chop onions into your saucepan and cook for 2 to 3 minutes..
Add in your ginger and garlic paste and cook for another 2 to 3 minutes..
Sprinkle over your thyme..
Give it a good stir..
Peel your potatoes..
Cut them into round slices of around 2 centimeter thickness as illustrated..
Pour your chopped potatoes into your onion/thyme..
Stir well to evenly coat your potatoes with all the flavours of the thyme and onion..
Cook for around 5 minutes…
While your potatoes are cooking, thinly slice your cabbage as illustrated..
Pour your cabbage slices onto your potatoes..
Gently stir your cabbage/potato mixture to mix them well..
Salt to taste..
Chop your tomato into small cubes..
Incorporate your tomato into your cabbage/potato mixture..
Be careful when stirring so that you do not crush your potatoes..
Cook for an additional 5 minutes before pouring in your water..
Cover and cook till all water is evaporated and potatoes are cooked..
Sprinkle over your chopped coriander..
Serve hot with any poultry or meat or your choice! 🙂
